EASY KETO CASHEW CHICKEN
This is Keto Cashew Keto - a low carb version of the classic takeaway Chinese favorite! Super light (and wholesome) food in one pan, perfect for a rich night meal!
Along with lunches preparing meals during the week, I also keep several favorite recipes for keto dinner in large rotation. This relieves the stress of having to have dinner every night of the week and ensures that everyone will really enjoy what I did.
Ingredients
1 1/2 pounds cut chicken breast into pieces. You can also use the hips.
1/8 salt
1/8 pepper
2 tsp avocado oil
1 green pepper cut into slices
1 cut white onion into slices
1/4 cup roasted cashew nuts
Garnish sesame seeds
Sliced green onions for garnish
1 tablespoon rice wine vinegar
Sauce
3 tablespoons of liquid amino acids
2 tsp sesame oil
1 teaspoon ground ginger
2 tbsp. Spoons of minced garlic
1 tablespoon of chili garlic sauce Use only 1/2 teaspoon for a softer recipe or double if you want it to be spicy!
Instructions
- In the bowl add the ingredients for the sauce (chili garlic sauce, chopped garlic, ginger and salt, pepper). Set aside.
- Heat the pan over low heat and saute the cashews until slightly brown and set aside.
- Add avocado oil to the pan and increase heat to high, add chicken and cook until cooked.
- Now add chopped peppers, onions and the sauce mixture and cook for about 5 minutes.
- Then you add liquid amino acids, cashews and vinegar. Cook until the sauce thickens.
- Top with sesame seeds and serve!
