MEDITERRANEAN CHOPPED SALAD PITAS
These Mediterranean sliced salad pitas are great for a quick and easy lunch or a healthy dinner without cooking!
It has been hot here lately. Like, 100 degrees hot. I am never ready for the heat, but especially in early May! Fortunately, today it was very windy and the cold wind must have been blowing, because by evening I was in a sweatshirt and I liked it.
When it gets hot here, I usually lose my desire to cook. I am tired and lazy and just want to cook food or not cook food. I want cold fresh dishes with lots of vegetables. These Mediterranean chopped salad pitas are just
INGREDIENTS
1 chopped chopped romaine lettuce, chopped
1 (15 ounces) can chickpeas, dried and rinsed
1 diced tomato
1 small diced cucumber
1 small red pepper, diced
1/2 small red onion, diced
3/4 cup chopped calamata olives
3/4 cup feta crumbs
2 tablespoons chopped fresh dill
Pita, for serving
Top dressing:
1/4 cup olive oil
2 tablespoons of red wine vinegar
1/2 teaspoon dried Italian seasoning
1/2 teaspoon of salt
1/4 teaspoon black pepper
INSTRUCTIONS
- Add the seasoning ingredients to a large bowl and beat until mixed. Then add all remaining chopped salad ingredients in a bowl and mix until everything is mixed.
- Spoon the chopped salad mixture into a warm pita bread and enjoy!
