4 INGREDIENT CHICKEN ZUCCHINI ROLLS
Ingredients
3 cups cooked chopped chicken breast - skin free
Purchased at the store 2½ cups of spaghetti or marinara sauce or homemade tomato sauce - divided
3 medium zucchini - sliced ⅛ inches long (I used a mandolin to make zucchini slices.)
1½ cups grated mozzarella - split
Instructions
- Preheat oven to 375 ° F.
- In a medium bowl, mix the chopped cooked chicken and 1 ½ cup tomato sauce. Stir well.
- In a casserole, distribute ½ cup of tomato sauce at the bottom.
- Before assembling zucchini rolls, place a piece of wax paper, aluminum foil or a clean cutting board on the table and lay out the slices of zucchini.
- First, distribute about 3 tablespoons of chicken mixture to each zucchini slice.
- Then sprinkle with mozzarella cheese. Save half a cup of mozzarella to top with zucchini noodles when you place them in a cooked casserole.
- Roll them carefully and place in the cooked casserole.
- Put the zucchini rolls in the remaining ½ cup of tomato sauce and sprinkle the remaining ½ cup of mozzarella cheese.
- Bake coated with foil or parchment paper for about 30 minutes. Remove the foil or parchment paper and bake for another 15-20 minutes until the cheese melts. Enjoy it!
